History of wine

Pieve di Sant’Ilario is the Cru of Cru! It is the result of careful production originating from a specific zoning within the territory of Montepulciano, with only a few bottles of exceptional quality produced. The idea of Vino Nobile di Montepulciano “Pieve” was born within the Consorzio del Vino Nobile thanks to a study that required the agreement and collective participation of all wine producers. The research identified 12 zones (UGAs), and Sant’Ilario is one of them. The decision to use a reference to the Pievi, ancient parish districts that existed when the territory was divided during the late Roman and Lombard periods, stems from historical research and analysis of the areas traditionally suited to the production of Vino Nobile.

Production area and grapes

"Pieve Sant'Ilario" Vino Nobile di Montepulciano DOCG

Vinification and maturation

Grapes are harvested in September; fermentation takes place in stainless steel tanks, with maceration lasting about 15 days, after which the wine undergoes malolactic fermentation. The ageing process continues in both small oak barrels (barriques and tonneaux) and large casks for a minimum period of 12 months. After this stage, the wine is transferred back into stainless steel for the final finishing operations and is then bottled. Before being released to the market, the wine undergoes further bottle ageing, which usually lasts at least 12 months.

Tasting notes

On the nose it is complex and ethereal, with rich aromas of ripe red fruits and sweet spices. On the palate it shows great length and elegance, with excellent concentration and structure. It should be served in medium-sized glasses at a temperature between 16 and 18°C.

Pairings

Perfectly paired with red meats, game, and wild game, especially when prepared with long cooking methods and aromatic spices. It is also excellent with first courses served with rich, flavorful sauces.

Fattoria del Cerro

Fattoria del Cerro, located in Montepulciano (Acquaviva), in the province of Siena, extends over 600 hectares of property, of which 181 are vineyards. With its 93 hectares registered in the Vino Nobile register, it is the largest private producer of Vino Nobile di Montepulciano.
